Most growers work just a few acres, with coffee planted alongside beans and corn, and bring their cherries to the cooperative’s mill at San Antonio. It’s graded SHB, Strictly Hard Bean, meaning it grew at high altitude, where cooler temperatures slow ripening and build a denser, sweeter bean. The Caturra and Catuaí cherries are carefully sorted and fully washed, then dried on raised beds. That gives a clean, bright, well-balanced cup with gentle sweetness and a crisp finish.
